What I usually do is bring up the "Play display" (this can be sen by holding R2) before the quarterback hikes the ball. If you are a FB or TE lead blocking for the running back, I usually run towards the hole that is suppose to be created, and pick up the first man I see. As long as you don't wander too far off from the hole that needs to be craeted, you should be able to pick up the right defender. This works well if you are selected as the player before the snap of the ball of course.
I haven't really used this feaute while the play is actually in progress though. I would probably start off by going into the options and setting the lead blocker option to "Slow down time." This will cause time to slow down when you switch players, allowing you to set up the blocker. After you get used to that, switch the clock back to real time between switching players. I'll have to experiment with this feature a little more while the play is live in order to give you some more tips.

The only real purpose I have found with the cut jukes are while running through holes on the left or right side of the offensive line. If I'm suppose to run between the T and the TE on the right side, I'll juke just as I hit exit the hole. This usually avoids the defenders running towards that point, and allows me to gain a few extra yards. It doesn't work all the time, and actually may increase your risk for fumbles, but it helps me some of the time.
I really don't find the cut jukes that useful while running out in the open, with one or two defenders running at you at an angle. I usually use the spin move for this, since it usually catch them running in the opposite direction.
