You don't. You just have to remember. So I suggest you either do all instant actions one map at a time. Ex. Doing all demolish,recover, etc. on winterblade then move on. Or just do all demolish then all recover, then extract, etc.

From the main menu, there is a option to check stats. One of the stats you can check is instant action missions. What it actually shows is your best score for mission/level type, but only missions you've completed will have a score.

Go to the OCN main menu and highlight the last tag. Then in the sub-menu select 'career stats', and there is a page for your overall statistics, campaign progress, and instant action progress. It will tell you everything including how many secondary/bonus objectives you've completed, sausages you've collected, and which instant action missions you've completed and your best score for each.
