Me? I have beaten Sonic The Hedgehog 1-3 including Sonic & Knuckles, they are fun games but there is one problem... I could never get all those chaos emeralds! They only possible way I can get 'em is by using cheats but for Sonic 3, there's one cheat that's impossible for me to do. Pressing Up Up Down Down Up Up Up Up when the Sega background turns black for Level select. Without that level select code, I can't cheat to get all the emeralds and become Super Sonic in Sonic 3.
Well, in Big Rigs you cannot:
lose a race
see the opponent moving (because he doesn't)
crash into a house
crash into the start line
crash into a bridge
lose speed while going up on a mountain
see the map borders
etc.etc.
I'll have a think on this because I'm sure there's something (not trying to toot my own horn, just nothing springs to mind yet!), but since you were talking about chaos emeralds, back in the day a buddy of mine did in fact collect every single chaos emerald, and had a power cut right before the outro. Ouch!
I've never collected all the chaos emeralds either.
EDIT: Oh, I know. I never finished Flatout on the 360. That game is way too hard for someone who isn't even that good at racing games! And also, I suck at just about every RTS ever, so I play them all on easy, if I even play them at all. It's quite embarassing really, because I consider myself to be quite good at games in general. I don't think I've ever finished one, save for the Dawn of War series.

In the game 1080 Snowboarding for the N64 I could never master the 1080 spin button combo. I've done it a couple of times on purpose and a couple of times on accident but never consistently. I haven't played the game in a LONG time and now that I'm much older and better with games I'm sure I can do it but I don't even know where the game is anymore.
I can't sit through a Phoeniz Wright game. Too much storyline and little playing of the game. I believe I got tired and lost after the fourth case. I am still confused about how to cross examine in that game.

I finished Phoenix Wright: Ace Attorney & Phoenix Wright: Justice for all - it was quite interesting but also very boring at the same time
The moment that 'Ultimate Band' came out I finished it in about 4 - 6 hours - playing drums is the easiest - Rhythm is the hardest in my opinion
I never beat Shinobi 3 Revenge of the Ninja Master, I can always get to the last friggin boss but I always die. One time I just dealt the final blow and the boss was doing his animation and my sister kicked the Sega as she walked into my room and it froze on me. I about killer her that day.
Right now, I haven't encountered anything "impossible", but what I am currently working on is collecting all chaos emeralds (that includes the super emeralds) for all characters in Sonic 3 and Knuckles. I am almost done with Sonic and Tails as a team. Next I'm going to work on Knuckles.
