I have a very effective way of adding "special" ingredients to brownies, cookies, cake, whatever. You need to purchase a double boiler. For those who don't know, it is a pot with a lid that sits directly on top of another pot. It is used for cooking with indirect heat. Here's how it goes :

1) Add water in bottom pot no more than half way.
2) Add the proper amount of either butter OR oil depending on what the recipe calls for.
3) Add
"magical herbal ingredient" - usually about an 1/8th will do. (Only time will tell how much YOU need to add) I strongly suggest not using real good herbs because it is kind of a waste.
4) Place lid ontop of magic pot and place magic pot on top of pot with water.
5) Low to medium heat for AT LEAST 30 MINUTES.


***Allow me to get a little scientific for a moment. When you are done with step 5, the magical ingredient has been absorbed by the butter OR oil. The greenish herbs in the "magic sauce" are pretty much useless now. You can pick most of them out or leave them in. I usually just grind up the herbs so fine that I don't have this problem.

6) Now what you have is a very special butter OR oil. Use this wonderful creation and add it to whatever it is you're making (brownies, cookies, etc)


***PRO TIP
I always make some extra special sauce by using a little more oil OR butter. When using oil I love making a fine italian salad dressing with the extras. When using butter I refrigerate the rest until it gets hard and I spread it all over toast in the morning. The possibilities are ENDLESS!!!

I hope nobody gets the wrong impression here. I am a high school biology teacher. Statistically speaking, I have had the highest student passing % on the statewide biology exam for the last 4 years. In the classroom I am a role model who teaches not only about biology, but about life, respect, teamwork, and all those aspects that make people mature and understanding. I love my job, I love the kids, and I wouldnt want to ever do anything else. And more importantly, 98% of the kids like me.
I have never been nor will I ever be the type of person to go into work with an "altered" state of mind. I dont drink (anymore - 4 years now!!!) nor do I do any kind of drugs with the exception of lighting up a phattie when I get home (and maybe a few bong hits before socom ). I'm not tootin my own bell here, but if I could be cloned and put in every classroom in this country, you wouldnt believe the changes you'd see in just a few short years. It is this FACT that keeps me going. trying to make a difference every single day. This is all I need!!!!!!












oh yeah, and a lighter too!!!!!!!!!

Cheddar Bay Biscuits from Red Lobster®

Serves: 8
Prep. Time: 0:15

2 cups Bisquick® baking mix Click here for the recipe!
2/3 cup milk - low fat okay
1/2 cup shredded mild cheddar cheese - low fat okay
1/4 cup butter OR margarine - melted
1/4 tsp. garlic powder
parsley flakes - as needed

-Combine Bisquick®, milk, and cheddar and beat with a wooden spoon for about 30 seconds.
-Spoon on to greased cookie sheet. Smooth tops down with spoon.
-Bake in 450 degree oven for 8-10 minutes.
-Combine butter and garlic powder and pour over hot biscuits; sprinkle with parsley.

Wetworks, you da man for that last one. I used to work in Red Lobster bartending YEARS ago and I have to say that I used to DEVOUR those biscuits every single time a new tray came out.

MOTTSARELLA STICKS (or if you're from Noo Yawk, that MOOTSADELL STICKS) **note:Mozzarella**

INGREDIENTS:
Mozzarella Cheese
Eggs
Italian breadcrumbs
Flour
Oil
your favorite marinara sauce


"PREPARATION"
Set up 3 wide rimmed bowls in an assembly line fashion with a tray or serving bowl at the end of the line
flour in one bowl, eggs in next bowl (yes, out of shell), breadcrumbs in next bowl, serving tray last
cut up brick of mozzarella into STICKS. I like cutting them the smaller way so they arent as long which leaves them prone to breaking. I like mine to be somewhat similar to the size of an index finger.
Take one stick at a time, lightly dust in in flour, roll it in egg, roll it in breadcrumbs, place on tray. Repeat until all sticks are made.
***IMPORTANT - ALL of the cheese better be covered in breadcrumbs or else things will get very messy - Trust me!!! If after breading the stick needs more crumbs, REDIP it in egg and breadcrumbs again. Sometimes I might do that to all of them just to get that extra layer of crunch.
When all sticks have been made, I like to put them in the freezer for about an hour just to harden up the cheese a bit. This will help the sticks come out just right IMO.

"COOK TIME"
In a frying pan, put an inch of oil and use med-high heat. This is very simple but can also lead to disaster if not done properly. If the heat isnt enough, you'll have a cheesy oily soggy mess. If its too high, the sticks will burn. PUT ONE STICK AT A TIME AT FIRST TO SEE HOW IT REACTS TO THE TEMPERATURE. IF IT HAS AN EVEN SIZZLE AND ISN'T TOO VIOLENT, KEEP ADDING MORE STICKS BUT DO NOT OVER FILL THE PAN.
Sticks should only take a minute or so to get to that golden brown crispy consistency. DO NOT OVERFRY!!!!!!!!!!! Remember, once they are golden and crispy, take them OUT and the cheese will continue to melt while they rest. When taking sticks out, rest them on papertowels to absorb any extra grease. We need to watch those calories, especially when we are eating fried cheese, right?

Blackened Mahi Mahi

Ingredients:
3 lbs of Mahi Mahi (It's a friggen fish...)
Your favorite fish seasoning
A lighter
Some Charcoal (Gas grills blow)
Batter-in-a-box for FISH!

Make batter according to box. Thaw Fish if frozen. LIGHTLY batter each fish and bring to a grill. Grill until the batter turns black. Some people do not like the batter, so you can just grill the fish until the OUTSIDE is black. Take off grill and serve.

Baked Haddock


Fresh Haddock fillets (de-skinned)
1 lemon
1 tbsp dill
1 tbsp parsley
2 Large garlic cloves (minced)
1 Can crab meat (no imatation crap cheapskate)
1 Row of ritz crackers
2 Tbsp butter

1. Add butter, dill, parsley, crab meat, garlic, to a sauce pan, heat until butter is melted and all ingredients are well mixed together.
2. Lay haddock fillets in shallow baking dish that has been slightly oiled so they won't stick.
3. Crush ritz crackers and add to melted butter crab mixture, stir together.
4. Place ritz cracker mixture over top of fillets.
5. Bake in a 400 degree oven for 30-35 mins.
6. Squeeze a little lemon juice over when golden brown !!
I got ton's of recipe's (my wife don't cook !!!!!!!!)
