Those videos look really nice. This game is gonna be something that is gonna keep my grades down and social life on the low scale for a while. It just looks so damn good

No, there's a crosshair. It's faint and hard to see in the videos because it's small, and it spreads out when moving (an indication that your shots will spray).
As per my experience with the beta, pulling the gun up to scope/sights, tends to be the norm. Not only does it allow you to aim better, it also makes your shots more accurate, which is more realistic.

It's been in all of the COD games (as far as I know).
