I'm going to try to put together an article discussing the Sony/Socom network architecture. But that may take a while, as I don't know much about it yet.
They way I see it (from a network design point of view.) The number of people online should not make a difference to gameplay. Maybe just the signon screens, player/ranking screens, administration stuffs.
There may be 10,000 games running at a time, but they are not all going to be going through the same 1 server. There will be a network of servers. And thus each server should be able to handle the number of players it has taken.
I'm courious if the lag is more or less in the breifing rooms were almost all the games are hosted games, or all the games played are server rooms.
If anyone has done any nosing around with a packet sniffer please private message me. I would be interested to compare our notes.
