Ouch, tough question. They're both amazing games, and you won't be disappointed either way.
Right now, my vote goes towards COD3, but only because RSV likes to freeze for me while I'm searching for games, which kicks me off xbox live and causes me to have connection problems when trying to get back on. I don't believe this is a common problem, so don't worry about it. Then again, COD3 is supposed to have problems connecting to matches, but I've never had a single problem.
I guess it depends on what you want, a WWII shooter, or a more modern special forces style shooter. I wouldn't say one is really "better" than the other.
